Sella & Mosca

An explosion of nature. 120 years of history that becomes wine. Sella & Mosca was established in Alghero, an enchanted corner of Sardinia, in 1899 by two enterprising Piedmontese men who give it its name: the engineer Sella, grandson of the famous statesman Quintino Sella, and the lawyer Edgardo Mosca. In that year, the two began an important work in reclaiming the land where the company stands today. 120 years have passed since then, and that enterprise still sounds pioneering, unique and a model. Thus Sella & Mosca at the beginning of the century transformed pasture into fertile vineyards, starting the most prestigious production of wines in Sardinia. Over the years the company has continued to fulfill its pioneering role, constantly introducing new processing methods that allowed the production of contemporary wine, whose characteristics reveal the new tradition of Sardinian wines. In 2002 Sella & Mosca became part of the Campari Group, but it was only in 2016, through the acquisition by the Terra Moretti Group, that the company gained a new impetus towards innovation, and respect for the territory.

Vermentino di Gallura D.O.C.G. Superiore​

Monteoro Sella & Mosca is a Vermentino di Gallura Superiore that in the glass, displays a typical bright straw-yellow color. The range of aromas evoke to the nose subtle and elegant notes, typical of this varietal, in which nuances of yellow fruit, white flowers and Mediterranean scrub are found. On the palate it is full-bodied, enveloping, and it brings a fresh taste, by holding the mouthful in a whirlwind of flavors with good persistence. A Sardinian white wine by which the Sella & Mosca winery, one of the most important production companies in the entire region, pays tribute to the territory.

The Chef’s pairing

Amberjack sashimi, broccoli, soy rice wafer, red mullet reduced sauce

Amberjack slightly dry marinated with salt and sugar, scalloped and served with a puffed rice wafer. The broccoli leaves are sautéed. A mullet reduced sauce completes the dish.

Vermentino di Gallura D.O.C.G. Superiore

The wines has a straw yellow color with golden shades. On the nose the aromas are complex and fine, pulpy fruit dominate the scene. Pineapple, tropical fruit, plum and ripe white fruit open the doors to spicy echoes and an almondy aftertaste. On the palate emerges an explosive freshness, integrated into a rounded and seductive body.

Umbrine tartare in seaweed and citrus broth, with shallot and sesame

The encounter between West and East is represented in a dish where the raw umbrine is accompanied with seaweed and citrus broth. The marinated shallot with toasted sesame give the dish a crunchy side.
