When you land in Gallura, consciously or not, a huge amount of sensory stimuli are activated, they make us better observe the surrounding environment better, The perception is that of a “murales” (mural), a world of colors that surrounds and attracts us. Murales is a family-run wine & tourism company, set up in 2007 in Olbia. The passion and the strong attraction to Gallura drove the Canopoli family to take up this gratifying activity, thanks to considerable experience in the sector which has allowed them to enhance a sucessful combination of respect for the best tradition, enriched by research and experimentation.

Miradas

Vermentino di Gallura D.O.C.G.

Miradas arises from a precise consideration made by tasting the grapes in the vineyard during the harvest. Finding it extraordinary, I decided to vinify this Vermentino as single-grape wine. After a short maceration in contact with the skins, and a very soft pressing, it rests for a few weeks on the lees, undergoing a long temperature-controlled fermentation, then naturally decanted until May, before being bottled. The aromatic exaltation of the fruit, full-bodied, soft and round, reaches its full expression in the year after the vintage. Its intense straw color and scent suggest hints of ripe golden apples, pineapple, banana, and pear. On the palate it is full, with, a remarkable lenght, the balance and the finesse make Miradas a wine of a great elegance. Good pairing with delicate first courses, white meats, fish stews. Magic with shellfish.

The chef’s pairing

Risotto, eggplant extract, candied tomato and clam emulsion with herbs

The eggplant is grilled, scooped out, and with its extract we cook the rice. From its dried peel we make a powder, while with the clams we obtain an emulsified fine herb sauce. The candied tomato, the tomato powder and the eggplant finish the dish.
