Vermentino di Gallura D.O.C.G. Superiore​

In the glass Jankara displays its beautiful delicate straw yellow color enlivened by bright and lively greeny nuances, hinting at its vitality. On the nose, Jankara offers fresh and elegant aromas of white flowers such as jasmine and honeysuckle, ripe white fruit such as rennet apples, pineapple, mandarin, almond, marjoram, and fine mineral notes. The palate displays good structure, where freshness and a decided sapidity are softened  by the high alcohol content, and a certain roundness. A wine with elegant and fine aromas, which persist on the palate. Jankara is an outstanding aperitif wine, served with tiny slices ham or bacon and jowl bacon. A perfect white to pair with well structured seafood appetizers, octopus or dogfish salad in burrida, seafood first courses such as tagliolini with lobster, or second courses such as baked red snapper with potatoes.

The Chef's pairing

Double cooked octopus, potato, Jerusalem artichoke, and swiss chard

The octopus is first boiled, and then sautéed to give it a crunch. To finish the dish mashed potato, Jeusalem artichoke stock, and seared chard.
