Consorzio san michele

Within the Vermentino di Gallura DOCG territory, the Berchidda area has always kept a very particular characteristic that is reflected in the wines produced here. The location of the vineyards, on the slopes of Monte Limbara at about 300 m a.s.l., the particular microclimate and the long tradition of the local winemakers bring a special charm to wines made in this area. Our production is exclusively based on the Vermentino grape variety, and divided into three different labels, whose names are linked to the deadly sins, such as Superbia (pride), Invidia (envy), and as homage to Berchidda’s music tradition (as birthplace of the internationally famous jazz musician Paolo Fresu), Sinfonia.

Superbia

Vermentino di Gallura D.O.C.G. Superiore​

A wine from specially selected grapes, with a good structure and complexity of intense and fine aromas. The palate has notes of yellow fruit, dates and Mediterranean scrub, along with a pleasant sapidity and freshness, as a result of the superb display of the character of this terroir which gives it life.

Excellent with crustaceans, shellfish and seafood, fish-based first courses, white meats, roasted fish, semi-mature cheeses, cold meats with a full but delicate taste.

The Chef’s pairing

Beef tartare, dehydrated caper, sea urchin emulsion, blueberry and nettle powder.

The beef is finely cut by hand, then seasoned with extra virgin olive oil, salt, pepper and dehydrated caper. We prepare an emulsion with sea urchins and a sauce with fresh blueberries: the combination of these ingredients creates a harmony between acidity and sapidity, while the nettle powder provides the dish with some fresh green notes.
