Animas

Animas is a young winery, but only on paper as we have been winegrowers and small winemakers for 3 generations, but only in 2018 did we decide to get more involved to provide  our customers  increasingly high quality products. We manage our winery with no presumption, but by being aware that our land, if loved with passion, can express its full potential. Through our wines we aim to create a sensorial journey, to allow you to taste all of the colors, aroma, flavors and reflections of our land: in short, its soul.

Animas

Vermentino di Gallura D.O.C.G. Superiore​

Bright straw yellow color with a golden tinge. The nose is mineral with hints of briny notes and flint that introduce a long persistent trail of elegant aromas of exotic fruit and pear. On the palate, the entry is sapid, decidedly fresh intertwined with the alcohol-glyceric components, enhancing the aromas on the palate. This finish is long, and gently almondy.

The Chef's pairing

Squid, charred leek, and squid stock

Squid vacuum cooked at 85°C with its entrails. The dish is served with roasted leek, while from the calamari entrails we obtain a sauce to accompany the dish, enhancing the intense flavor of the sea.
